We like to source our cocoa beans from selected farms, cooperative and social enterprise around the world. This choice gives us the advantage of a higher grade cacao and the certainty to support ethically managed cacao plantation.
No one is happy to consume a bottle of wine where there is no information regarding the variety of the grape, the provenience, the maker and the year. Why are we okay to settle for a piece of chocolate that only says "Dark Chocolate" then? There is as much variety and flavours to discover in the world of small batch chocolate as in the wine industry.
