Cacao, experienced like never before

Cocoa Symphony is a dining experience that reimagines Cocoa beyond dessert — born from our first appearance at the Melbourne Food and Wine Festival 2025.

Each edition takes place in a new, carefully chosen location, with a different guest chef joining Alessandro Luppolo to explore cocoa in all its forms: fermented, roasted, distilled, and, of course, bean-to-bar chocolate.

Through a multi-course menu, guests are taken on a journey of flavour — where cocoa is savoury, smoky, earthy, floral, even spicy. From rich reductions to delicate dustings and bold textures, each plate tells a story of collaboration, seasonality, and a deep respect for the ingredient.
