Our Chocolate Bon Bons are all handcrafted in our Melbourne kitchen using our Bean-to-bar chocolate. After years of creating desserts all over the world, I have taken the opportunity to translate those flavour pairings I have discovered into a chocolate form.

The flavour selection is ever-changing, based on the season, produce availability and my mood. The current selection now includes:

  • Spiced Beetroot and Pumpkin Seed Praline: Cinnamon and Nutmeg gives dimension to the beetroot ganache, paired to an unreasonably good pumpkin seed praline.
  • Hazelnut Praline a l'ancienne: Tasmanian Hazelnut gently roasted and carefully combined with caramel; seasoned with salt and olive oil.
  • Whiskey Soft Caramel: Apera cask Whiskey from Hunter Island (Tasmania) is the hero flavor, the soft caramel become a vehicle to distribute the whiskey flavor.
  • 80% Dark Chocolate: San Jose, Ecuador; this amazing cacao is designed to be tasted on its own with no extra flavoring added. you will be able to taste notes of cardamom, ginger and cinnamon in the chocolate itself, out of this world.
  • Apricot Puree and Olive Oil Emulsion: Utilising fresh, dried and nectar apricot I am able to make an astonishing apricot puree, rich in flavor and perfectly seasoned; paired with a sweet olive oil emulsion, made with an oil from Puglia, south of Italy.
  • Root Vegetables Hot Honey: Carrot, Parsnip and Sweet Potato are roasted hard with Rosmary, turned into a paste and used to compose a milk chocolate ganache, to be seasoned with hot honey. Definately not a classic but here to stay!

 

    Please store in the fridge and enjoy your chocolates at room temperature, best consumed within the first few days after you receive them.
